This is really interesting! I think insects will became the food of the future, we just have to get over our squeamishness first! I mean, when you think about some of the things we eat already without blinking (oysters?! Liver pâté?! Baby cow?!) eating insects isn’t too big a leap. There’s a bakery in Finland who sell insect flour products. (I’m based in Finland). I haven’t had the chance to try them yet but it’s on my list! I look forward to getting your newsletters!

Une punaise du riz pour vous Mme? Prawns, crab and lobster are great for punaise du mer. Interesting and will be hard to grow the concept. Not all that different than eating processed beef, pork fowl and fish but not easy to wrap ones palate around. Rice bugs were/are considered a delicacy in Thailand. Catch one, snap head off and push the partially digested rice into your mouth. I tried it and was embarrassed when it came back out so fast right then/there. My local friends appreciated the try and found the other part hilarious.
